Sodium metabisulfite

Sodium metabisulfite is a white crystalline or powdery solid with a slightly sulfurous odor. It is toxic when inhaled and strongly irritates skin and tissues. It is non-flammable, but may decompose and release toxic sulfur and sodium oxide fumes when heated to high temperatures. It forms a corrosive acid when mixed with water. Sodium metabisulfite is mainly used in the production of sulfurous acid. In the food industry, it can be added to wheat flour to reduce gluten toughness, making biscuits crisp; it is also used for dehydrating vegetables to retain nutrients and for preserving fruits; it is used in the manufacture of confectionery and beverages as a sterilizing agent; it is a preservative in the brewing industry; and in the edible flavor industry to produce vanillin, etc. In industrial production, it can be used as a reducing agent in redox systems in polymer synthesis and as a sulfonating agent in the synthesis of sulfonated resins. In the oilfield industry, it is used as an oxygen scavenger in working fluids, etc.
